Founders in Food and Beverage at Venture in the Capital 2025

Students Andrew Deves (MSB’25) and Emma Shaich (MSB’26) moderated the food and beverage panel at Georgetown’s 2025 Venture in the Capital Conference. Panelists were Adam Eskin, founder and executive chairman of DIG; Larry Liu, founder and CEO of the Asian grocery platform Weee!; and Steve Salis, co-founder of &pizza and founder of Salis Holdings.

Eskin said DIG’s success comes from investing in its supply chain, farm partnerships and chef-led kitchens. Liu explained that it took Weee! three years to find the right model, and that comparing his forecasts with actual results helped him keep correcting course. He also noted that “product market fit is never permanent,” since serving a niche well does not guarantee success in a broader market. Salis described how a growing company’s talent needs change, from generalists who wear many hats to specialists, and said technology such as AI only helps when a business knows how to put it to use.
