Food as Medicine: A Panel on Food and Health Care Innovation

Georgetown Entrepreneurship’s Healthcare Entrepreneurship and Innovation Initiative hosted this Zoom panel on Nov. 1, 2023. Barbara White, an entrepreneur in residence at Georgetown since 2019, moderated a conversation with Dr. Labuda, professor and director of biotechnology programs at Georgetown; Laney Clark of the Good Food Institute, also a Georgetown entrepreneur in residence; and the founder of Proxy Foods, an AI recipe formulation company, who earned a master’s in biotechnology at Georgetown.

White opened with statistics on diet and chronic disease and shared her own experience as an organ transplant recipient whose care includes food as medicine. Panelists discussed how biotechnology can make food more nutritious and flavorful, how AI can speed recipe development, and how alternative proteins and hybrid products may reduce harmful ingredients in our diets. They also noted that the field needs not only scientists but also people with business, marketing and legal skills.
